Thai Shrimp Soup with Coconut, Lemongrass & Red Curry

I love trying new recipes and for dinner tonight I decided to try Blue Apron’s
Thai Shrimp Soup with Coconut, Lemongrass & Red Curry. Not only was the recipe straight forward, it was also absolutely delicious!

I added a bit more red curry paste than called for, for a bit more spice. In addition I decided to use coconut water with the rice to add some coconut flavour!

I’m looking forward to leftovers for lunch tomorrow 🙂
