So, my husband and I have been trying to have a vegetarian meal once a week. Since it’s fall we’ve been having fun experimenting with soups and crockpot dishes when it comes to this meal. I just love all the hearty veggies and squashes that are available in the fall ❤
For tonights dinner we decided to try Butternut Squash and Toasted Seed Soup
This soup combined butternut squash, toasted sesame seeds, toasted sunflower seeds and a variety of flavourful spices!
It didn’t take long at all for the squash to cook fully through
and once it was, I pureed everything together in a blender ( Man, I wish I owned a Vitamix!)
The end result was delicious! We topped with a bit of plain greek yogurt, sunflower seeds and a sprinkle of fresh thyme 🙂 The only thing I would have liked to have added, would have been a slice of sourdough. Next time 😉
